Sweet potato protein cake 21P/34C/2F
Firstly, I must let you know that this isn’t an overly sweet cake. I only used about 3 tspns of sweetener for the whole thing as I prefer the actual sweet potato flavour over just a general “sweet” flavour. Of course, you can use sugar if you wish but this will change the macros.
1200g sweet potato (mashed) raw weight
400ml egg whites
90g protein powder (flavour is up to you)
75g of peanut flour*
some sweetener of your choice (up to you for the amount)
bit of baking powder
*Optional: add additional protein powder if you don’t want to use this.
1. Preheat oven to 180c
2. Precook sweet potato. I microwave it and overcook it purposely so it’s easy to mash.
3. Add remaining ingredients and stir until it is all mixed through. (The mixture should be similar to a regular cake batter)
4. Spray a baking pan with oil and put the mixture into the pan
5. Bake for approximately 30mins or until the top starts to brown. (depending on your oven you may have to put some alfoil over the top if the top starts to cook too quickly). Insert a knife into the centre to check it is cooked through.
Cut into 8 large slices. 234 Cals 21P/34C/2F per slice.
Goes very well with maple syrup
